Elementary Chef Trek at Richardson~Olmsted

On Monday, March 30th Richardson~Olmsted Elementary School welcomed Whitsons’ traveling chef, Rich Sandmann as part of an exciting program, the Elementary Chef Trek.  This program is designed to introduce crisp fruits and vegetables in flavorful enjoyable recipe, which promotes healthy eating habits, introduces students to new and exciting healthy foods, and makes eating a fun and rewarding experience.  

As the students entered the cafeteria, they were welcomed with a delicious fruit and vegetable medley sample, called Minted Cucumber & Mandarin Orange Salad.  Chef Sandmann greeted the students and provided them with details on how the salad is made and how it can be made at home.  The students raved about the dish and even asked for seconds.

Below is the recipe, which can be enjoyed as a snack or as a side dish. Bon Appetit! 

 

Minted Cucumber and Mandarin Orange SaladchefTrek

2 cucumbers – sliced on a bias and place d in a large bowl

1 orange (canned or fresh) sliced and placed in the large bowl

1 Tbsp. Fresh mint chopped

2 oz. Apple cider Vinegar

1 oz. Honey

3 oz. Olive Oil

Directions:

  • Add mint, olive oil, honey, and vinegar to a small bowl and mix together.
  • Toss dressing into the large bowl containing the cucumbers and oranges.  Mix well.
  • Serve chilled and enjoy (makes 12 servings of ¼ cup per serving)
